Recipe: Beet Chips


Beets are a nutrient-dense superfood that enjoy a long growing season in Massachusetts, May through October. Enjoy these easy baked veggie chips!

  • 7 medium red and/or gold beets 
  • 1/4 cup olive oil 
  • 1 teaspoon chopped fresh rosemary 
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Preheat oven to 375 degrees.

Wash beets and cut 1/8-inch thick or thinner using a sharp knife or mandoline. Coat the beets with olive oil. Mix together rosemary, salt, pepper (or other seasoning of your choice) and mix with oiled beets.

Bake on a rimmed baking sheet until crisp, about 15 to 20 minutes, flipping halfway through.

These delicious chips can be made with a variety of veggies — try Delicata squash , sweet potatoes or carrots.
