Recipe: Maple Salad Dressing

Pure maple syrup is a rich source of antioxidants and minerals such as manganese, zinc, iron, and calcium. The caramel flavor in maple syrup adds a rich complexity to the flavor of this tangy dressing.
Serves 4. Contributed by Heidi Harring.
Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 3 tablespoons maple syrup
- 2 teaspoons Dijon mustard
- 1 – 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions:
In a jar with a tight fitting lid, mix together the olive oil, vinegar, maple syrup, mustard, garlic, salt and pepper. Shake vigorously. Add dressing (to taste) to any green salad and toss well. Serve immediately.
